Hazelnut/ Walnut Brownies
Ingredients:
2 cups of hazelnuts or walnuts
4 eggs
2 cups sugar
1/2 teaspoon of salt
1 teaspoon vanilla
250g dark chocolate (1 pack)
180g (6 oz) butter
2 cups plain flour
For the icing:
2 cups of icing sugar
4 tbsp cocoa
30g butter
7 tbsp hot water
Method:
Place eggs, sugar, salt and vanilla in a mixing bowl. Beat with a whisk, wooden spoon or rotary beater until mixture is light and fluffy.
Note: To get the best results with Brownies (soft and slightly chewy), it is important that after this step, all the other ingredients must be added quickly and mixed lightly.
Place chopped chocolate and butter on the top half of a double saucepan. Place pan over hot water, stir until the butter and chocolate are melted and combined. Allow chocolate mixture to cool slightly, add egg and sugar mixture.
Mix lightly until combined.
Finely chop the nuts and add to mixture. Add sifted flour and stir with a metal spoon until all flour is incorporated.
Pour mixture into baking dish and bake in a moderate oven for 30 minutes.
Allow to cool completely before icing.
Combine all icing ingredients and flood the top of the cooled brownies.
Allow icing to set and slice ready to be served.
